A good, sunny morning to all!

Soup this week is sweet Green Onion & Potato, think potato-leek, but greener and sweeter. Should just right with another round of cooler weather this weekend. The “couple of salads” continues… french lentil salad along with roasted asparagus, hard boiled egg, cucumber salad and breakfast radishes and creamy camembert is a perfect picnic lunch with our cold roast chicken. Quiche is Asparagus with Green Peas, Scallion & Goat Cheese. This week’s sandwich is Kinderhook Smoked Pork, Sharp Cheddar & Rhubarb Chutney on baguette. Sounds yummy with this week’s soup!! As for something sweet, Blue Star Farm strawberries and Samascott”s Farm rhubarb play together in a beautiful spring galette.

Via Ravioli are the great to have in your freezer for a quick and delicious dinner. The ravioli take 4 minutes in boiling water. While pasta is boiling, melt the butter and sauté a little garlic or sliced spring onion in a pan large enough to hold the ravioli. Once ravioli are cooked add them directly to the pan, reserving a little pasta water, add a splash of water to the pan, toss things around, maybe add a little more butter or water to keep things loose. Transfer to a warm bowl and top with grated parmigiano… easy-peasy!
